Boloco Begins Serving Naturally-Raised Chicken in all of its 13 Restaurants

Boston, MA — Boloco announced today that it is now serving naturally raised chicken in all 13 of its Massachusetts and New Hampshire restaurants, making 100% of the grilled and braised meats served at Boloco naturally raised. Naturally raised meat comes from animals that are raised humanely on vegetarian diets with no added hormones or given antibiotics.

“We realize this won’t change the world overnight”, said John Pepper, Boloco founder and CEO, “but we are absolutely sure it is the right thing to do. Our customers have told us for a number of years that the source of their food matters – a lot!”

The introduction of naturally-raised meats is only one of a number of food-related innovations at Boloco during the past two years. Among other things, Boloco has eliminated trans-fats from its menu, introduced rBGH-free milk and cream, and added cage-free eggs for its breakfast burritos as part of its commitment to its customers of serving high quality, safe food.

“We are a small and nimble team,” said Mike Harder, President and COO. “If we can’t make these changes happen then who can? Our goal is to partner with suppliers who also believe these types of changes are important. Because others in the industry are slowly but surely moving in the same direction at varying speeds, we’re finding that it is slowly becoming less difficult to source natural ingredients.”

About Boloco: Boloco is a Boston-based group of 13 restaurants that serve traditional and inspired burritos, bowls, salads and smoothies using a blend of pleasantly unexpected ingredients. Every order is made to the specific wishes of each customer. The communities served by Boloco include Boston, Brighton, Somerville, Cambridge, Medford, and Natick in Massachusetts as well as Hanover, NH.

Green Restaurant Association: The Green Restaurant Association (GRA), a national non-profit organization was founded in 1990 to help the restaurant industry achieve ecological sustainability. The GRA is endorsed by America’s major environmental organizations and works with restaurants across the continent. Through its eleven environmental guidelines, the GRA provides environmental consulting, education, and certification to make it easy for individual operators, restaurant groups, and chains to improve their environmental practices in a profitable manner.

Corn, the New Word in Cups at Boloco

Boloco ditches Styrofoam cups in favor of environmentally-friendly cups made entirely from corn

BOSTON, MA – Made entirely from corn harvested in the fields near Blair, NE (pop. 19,918), Boloco Corn Cups have replaced Styrofoam cups at all 13 Boloco restaurants. Corn Cups are fully compostable and will break down in less than 150 days under commercial composting conditions. These cups are used to serve smoothies and cold beverages in all Boloco restaurants beginning immediately.

“Did we do this for ourselves?” said John Pepper, co-founder and CEO of Boloco. “You bet we did. Most restaurants, including ours, generate an embarrassing amount of trash each day. So when we had the opportunity to change to an earth-borne product that moves the needle in the right direction, we jumped on it. It wasn’t a hard decision, and besides, these new Corn Cups look a lot cooler.”

The Corn Cups have joined other recent innovations at Boloco including corn lids, humanely raised meats (vegetarian fed, antibiotic-free, no added growth hormones), and the use of bio composite products – such as countertops made from 100% post-consumer recycled paper – in the construction of new Boloco restaurants.

In addition to the Corn Cups, corn will continue to be available in Boloco’s Corn Salsa.
